A New Look!


 TAAA DAAA!  Here is a fun picture of Bam Bam in a box to celebrate my new blog design!


So, this is the new look, courtesy of Erin from Designer Blogs.  I've been wanting to spring for a custom blog design for a while now, and I'm really happy with the results.  I did a lot of research, and this little company does a great job for very reasonable prices.What do you guys think? I want your opinions!

Fun Photos for a Rainy Day

Since today is rainy and nasty, I thought I'd write a not-all-food-related post about recent things in my life that might make you smile.

Here is the most bizarre:


double - yolked egg.

For some strange reason, the carton of eggs that is currently in my refrigerator has so far produced 3 out of 8 double-yolked eggs.  I cracked the first one the other day and was really surprised and kind of excited because I have never seen one before.  Then, when I cracked another one a few minutes later, I got kind of weirded out.  I mean, I spend more on the organic, cage-free eggs, but does this mean they're all genetically mutated and stuff?

So, I looked up a ton of stuff online about it, and apparently, these eggs happen on a fairly regular basis, especially with young layers.  Since they weigh a little more than single yolk eggs, they tend to get grouped together by the machines.  So, if you find one in a carton, you have a good chance of finding a few more.   I will keep you posted on how many more end up being double-yolkers.  Weird stuff.

*Update: 6 out of 12 eggs ended up being double-yolkers.  I was on the fence about it, but I've decided that this definitely weirds me out.  I'm going back to the local Celeste Albers eggs - don't know why I ever veered away from them to begin with! They're worth the extra small effort!  If you live in Charleston, you can find them at The Glass Onion when the Marion Square Farmers Market is closed for the winter season.

  "Party like it's 1989" employee party

This is a special one of Brandon and I at our employee party this past weekend.  The theme was 80's inspired, so we got all decked out.  What you can't see is that he sported 2 earrings all day and had his pants all rolled up. Yes, that is a white windbreaker that he wore around his waist all day long.   I'm definitely rockin' the side pony and leggings, although you can't really tell from the photo.

Dad and Chloe.

My mom sent me this one last week and I had to share it.  This is my dad with Chloe, one of two recent additions to their household.  Chloe and her two sisters Joey and Muffin (who my sister is now taking care of) showed up on my parents doorstep about 6 months ago, tiny, sick, and starving.  Seems like they've adjusted fairly well.

Chocolate Peppermint Covered Pretzels


Happy Christmas!

A short one today, as I must get on the road to get home for Christmas!

I must admit, I did not come up with these myself, although they are VERY easy.  I found them over at Savory Sweet Life.  Although I don't have any cute kids to help me, I still managed to tackle a batch just in time for the Christmas eve shift at work.

All you need is pretzels, white and milk chocolate chips, and peppermints.  Did I say these were easy?

First, crush the peppermints.  Then, melt the chocolate chips. 




Now comes the fun part.

Dip a pretzel in the chocolate.




Now, coat it in the peppermint candies.





Place on a lined cookie sheet.  Repeat. 





Dip.



Coat.

Repeat. Over and over again. 

Chill until hardened.

These were addictively refreshing, and still very festive.  Everyone at work seemed to enjoy them.

White Chili

I hate it when people start playing Christmas carols and decorating their house before Thanksgiving has even happened. I like to give Thanksgiving its own due time before moving into the Christmas spirit.  That being said, I probably should have gotten my tree up before now, but, whatever, its up now. 

Let me tell you, Bam Bam was a *huge* helper. 

If he were  human he'd be a gin drinker.

Anyway, I've been waiting for a nice blustery day to make Mom's white chili recipe, but finally gave up because, oh yeah, I live in Charleston. The weather keeps toying around with the idea of getting cold, and then changes its mind and turns warm again. I'm running around in short sleeves in the middle of December, for goodness' sake.

So, I gave up and made the chili.  I love this recipe, and its not as unhealthy as your usual beefy variety.  Here's the recipe:

White Chili

1 pound dried Great Northern beans
2 pounds boneless chicken breasts
1 tablespoon olive oil
2 medium onions, chopped
4 cloves minced garlic
2 fresh jalapenos, chopped *the original called for canned chilies, but I think fresh probably work just as well. I actually felt like I could have added a few more*
2 teaspoons cumin
1 1/2 teaspoons oregano
1/4 teaspoon cloves
1/4 teaspoon cayenne pepper
6 cups chicken stock
3 cups (12 oz) grated Monterey Jack cheese
Sour cream, cilantro, corn chips, salsa- whatever  you like to garnish with

Place beans in heavy large pot.  Add enough cold water to cover by at least 3 inches.  Soak overnight.

Place chicken in heavy large saucepan.  Add cold water to cover and bring to a simmer.  Cook until just tender, about 15 minutes.  Drain and cool.  Cut chicken into cubes.

Drain beans.  Heat oil in a skillet over medium high heat.  Add onions and saute until translucent, about 10 minutes.

Stir in garlic, then chilies, cumin, oregano, cloves, and cayenne and saute 2 minutes.

Place saute mixture along with beans and stock into a large pot (or crock pot- this would be an easy recipe to make while you're at work) and bring to a boil.  Reduce heat and simmer until beans are very tender, stirring occasionally, about 2 hours.

Add chicken and 1.5 cups cheese to chili and stir until cheese melts.  Season to taste with salt and pepper.  

 
 My garnishes of choice.  Gotta have some Fritos scoops!

Ladle chili into bowls. Serve with remaining cheese and garnish to your liking.

 
 Mmm.  Goes well with a cold beer.

Bam Bam's New Game


No food photos today. Just an update on my crazy cat's new favorite thing to do:


 






Yep, those are the pull strings for a ceiling fan. He does this over, and over, and over again.  I took these shots over the course of four different self-propelled launchesAnd as I sit at this computer, I can hear him in the other room, thumping every time he (not so) gracefully lands on the floor.

Hope this is just a phase.

A Rare Sunday Morning


The pampered and the pauper


Rare because I usually have to work the dreaded brunch shift.  Indeed, I was scheduled to work a double (as usual), cocktailing tonight.  When I came in though, we had too many servers on and I was asked if I wanted the morning off. Which, of course, I did.

So, what to do?

I visited my favorite coffee shop right down the road, Alchemy Coffee. Got their signature coffee, The Alchemist, which is a mocha sprinkled with a bit of cayenne pepper.  The cayenne adds a nice spicy complexity to the cocoa/coffee flavor.

Picked up a Sunday paper (which I never do) and read the entire thing, front to back.

And.. made a big batch of breakfast hash.  I had a leftover baked potato from lunch the other day ( I always bake one extra with this very breakfast in mind) (Mom gets props for teaching me to do this) that I chopped up.  To start, I sauteed the onions and garlic until they softened.  In the meantime, I cooked a couple boneless chicken breasts (one for the hash, and one to have in the fridge for the next random meal) (are you seeing the trend?) and steamed a bunch of broccoli florets.  Add the potatoes to the onions, brown, and add the chicken.  In goes the broccoli, some frozen corn, salt, pepper, chili powder, dried thyme, and it looks like this:

Now that I'm fat and happy, I have to go back in for the night shift. Boo. At least I had a nice morning :)
